Maple Cranberry Roasted Chicken

Winter is the perfect time to have a cozy night in with a home cooked meal. I love to cook with the flavors of the season, like rosemary, cranberry and maple.  They blend well together and are not only delicious but comforting this time of year. I love cooking one pan meals for easy cleanup and this is so easy, yet oh so good!

One of my favorite Winter fruits to cook and bake with are cranberries. Cranberries are considered to be a superfood due to their antioxidant content and nutrients. Once they are cooked in this recipe, they are so soft and absolutely delicious.

Maple, dijon, olive oil and balsamic are one of my favorite flavor combinations. They’re easy on your system (supporting great digestion and a healthy you), and also make a great salad dressing that goes well with this dish.`

Maple Cranberry Roasted Chicken

Servings: 2

Prep time: 5 minutes

Cook time: 30 minutes

Total time: 35 mins 

Course: dinner 

Diet: dairy free and gluten free

Ingredients:

  • 2 tbsp olive oil
  • 4 chicken thighs
  • 3 tbsp white balsamic vinegar
  • ½ cup maple syrup
  • ¼ cup Dijon mustard
  • 2 capsules of Just Thrive Probiotic 
  • 2 cloves garlic
  • ½ cup fresh cranberries
  • 3 sprigs of rosemary
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375° and heat your cast iron pan on the stove medium-high. Add in olive oil.
  2. Season your chicken. Add chicken thighs to the pan and sear each side. No need to cook all the way through. Cook for a few minutes until the skin is crispy.
  3. Remove chicken from pan and set aside.
  4. Add in the white balsamic, Dijon, maple syrup, garlic and Just Thrive Probiotic. Whisk together until a thin sauce forms.
  5. Add the chicken back into the pan. Add in fresh rosemary and cranberries.
  6. Bake for about 20 minutes until chicken is cooked.
  7. Serve and enjoy the accolades!
